Dry vs wet packed
Dry-packed scallops are free of phosphates and brown quickly when seared. Wet-packed often hold water, spit in the pan, and taste washed-out. Ask your fishmonger which you are buying.
Size matters for technique: large sea scallops need a full two-sided sear; bay scallops cook in a flash and shine in sews and salads.
How to order scallops
