Langoustines: Taste, How to Cook & Order

Sweet, delicate claws and tails — Europe’s prized small lobster, brilliant grilled or simply boiled.

Flavour

Sweet, lobster-like

Texture

Delicate firm flesh

Best for

Grill or brief boil

Oiliness

Low

Taste

Sweet, refined, lobster-like — more delicate than large lobster.

Season

Cold-water fisheries year-round with quality peaks by region; handle very fresh.

Habitat

Muddy North Atlantic and Mediterranean-adjacent seabeds — iconic in Scotland, Ireland, Iberia, France.

Langoustines (Norway lobster / scampi) are not giant prawns — they are small lobsters with sweet tails and claws. Overcooking turns them cottony in seconds.

Order them in Edinburgh, Dublin, Paris, and Spanish marisquerías when the ice looks serious and the price is clear.

Also called

Langoustine · Norway lobster · Scampi · Cigala · Dublin Bay prawn

Best cooking methods

Butter grill · Brief boil · Thermidor-style · Garlic oil pan

Buying and freshness

Live or very recently killed is ideal. Grey, ammonia-smelling langoustines are a walk-away. Frozen can be excellent if frozen at sea — thaw gently and pat dry before grilling.

Cooking rule

High heat, short time. Split and grill with butter, or boil briefly and serve with mayonnaise. Do not simmer for twenty minutes “to be safe.”

FAQ — Langoustine

Are langoustines the same as scampi?+

In much of Europe, scampi means langoustine. In some places “scampi” means breaded prawn tails — ask which product you are getting.

Why are langoustines expensive?+

Delicate catch, limited yield, and high restaurant demand. Price should still be transparent per piece or kilo.
