How to cook swordfish

Pat steaks dry, oil lightly, and grill over high heat about 3–4 minutes per side for a 2.5 cm steak, resting to just-opaque. A squeeze of lemon or a herb salsa is enough.

Thin supermarket pieces overcook in minutes. Ask for centre-cut loin steaks at least two centimetres thick.

Is swordfish healthy to eat often?+

It is a lean protein but a large predator, so mercury is higher than in sardines or salmon. Enjoy it as an occasional steak, not a daily fillet.

Should swordfish be cooked through?+

Cook to just opaque and still moist in the centre. Fully chalky swordfish is overdone. It is not a fish you want raw like tuna.
