    Pat the tuna very dry. Season with salt, pepper, and half the oregano. Oil lightly.

    Heat a heavy pan until nearly smoking. Sear tuna 1–2 minutes per side for rare–medium-rare centres (thicker steaks need a touch longer). Transfer to warm plates.

    Make the pan sauce

    Lower heat. Add remaining oil, garlic, and capers; cook 30–60 seconds until fragrant. Add lemon juice, remaining oregano, and tomatoes if using. Spoon over the tuna.
