The Miami stack, in season

Ceviche first when you want a sharp lunch: lime, chilli, and fish cut small enough to cure in minutes, not a sweet cup that sat since brunch. Stone crab only from mid-October to the beginning of May, cracked, cold, with mustard sauce. Outside those months the claws are storage. Snapper or hogfish, whole, is the order when the crab season is shut and the menu is honest.

Mahi is the fillet people mean by "a nice fish." It dries out under a thick glaze. Ask for grill or a light fry, and skip the topping that exists to photograph. Yellowtail is the local name to prefer when the server can say it came from nearby boats rather than a box.

Conch fritters and a frozen shrimp tower are the tourist column. They are fine if you know that is what you ordered. They are a miss if you came for the fish.

Neighbourhood still decides the night. Beach decks, a Grove marina, a river warehouse, and a Brickell room do not cook the same way. Use Miami to separate them before you book the view.

Mid-October is the line. Before it, do not order stone crab and expect this season's claws. After it, the claws are the point and the snapper can wait. Ceviche stays a lunch dish. A sweet cup at 9pm has been sitting.
