What changes from Sydney to Perth
Sydney's ordinary great meal is an oyster and a grilled fish, not a harbour cruise plate. Ask the farm, not "a dozen." Pacific and Sydney rock oysters are different cups. A steakhouse with one salmon fillet is not the page you searched.
Melbourne cooks more like a produce city that happens to be on a bay: finer dining rooms, a serious oyster bar, and fish named on the menu. Perth's signal is crayfish when the season and the price make sense, plus the same rule as everywhere: a whole fish beats an unnamed fillet. Brisbane and the Gold Coast add mud crab and a more tropical grill. The crab should be priced by size before it hits the steamer.
Do not treat the country as one list. Open Sydney if that is the trip, or Melbourne, Perth, Brisbane, and the Gold Coast on their own pages. The Australia hub is only the map between them.
Season still beats the skyline. Oysters in Sydney, crayfish in Perth, and mud crab farther north are different weeks and different prices. If a menu lists all three every day of the year at one hotel, it is buying frozen stock. Ask which animal arrived this week and eat that.
Write the city on the reservation, not the country. A Sydney oyster bar and a Perth crayfish lunch are not interchangeable just because both sit on salt water.
