Coast versus capital
On the Caribbean side the useful order is a whole fried fish, a sharp ceviche, and grilled shrimp that still taste of the shell. Aguachile should be hot and lime-bright, not a sweet shrimp cocktail with ketchup. If the fish is "a la veracruzana" or in a heavy mojo, you are eating a sauce. That can be delicious. It is a different decision.
Mexico City eats the coast by air and by road. The marisquería test is turnover: a room that cracks crabs at 3pm on a Tuesday is buying for regulars. A hotel "sea food station" next to the omelette pan is not. Ask whether the octopus was cooked that morning. Rubbery slices in a cold salad are yesterday's.
Cancún splits the same way the Beach does in other countries. The hotel zone sells the photo. The town and the market sell the fish. Read Cancún and Mexico City as different meals, with the Mexico hub only as the bridge.
A cold shrimp cocktail with ketchup is a snack. A whole fried fish with a sharp sauce is the meal. Say which one you want before you sit under a palapa that only has the cocktail on the picture menu. Turnover at 3pm is a better sign than a ocean mural.
