Thick white halibut fillet on crushed ice with lemon and dill

Guía de especie · Hippoglossus spp. (Pacific and Atlantic)

Halibut: Taste, Thick Steaks & How to Cook

Premium thick white fish — mild, large flakes, and unforgiving if cooked past moist.

Flavour

Mild premium white fish

Texture

Large moist flakes

Best for

Steaks, roast, bake

Oiliness

Low–moderate

Sabor

Clean, mild, slightly sweet — a premium blank canvas that should still taste of the sea.

Temporada

Peak fisheries are often spring–autumn depending on ocean; frozen-at-sea quality is widely used.

Hábitat

Cold North Pacific and North Atlantic seafloors — a large flatfish.

Halibut is the thick-cut white fish of cold oceans: restaurant steaks, butter-basted pans, and a reputation that collapses if the cook goes even two minutes too long.

Buy centre pieces with translucency and firmness. Grey watery “halibut” at a bargain price is usually a different fish or tired product.

Pacific vs Atlantic

Both are true halibut when labelled honestly. Pacific is the larger commercial volume in many markets. Ask origin. Do not confuse with Greenland turbot or cheaper flatfish sold under vague “white fish” names.

Cooking rule

Thick pieces want medium-hot heat and a rest. Thin tail pieces dry fast — save those for gentle bake. Lemon-butter, herbs, and a hot pan beat heavy batter for this fish.

FAQ — Halibut

Why is my halibut dry?+

Almost always overcooking. Pull it when the centre is just turning opaque and rest. Thick steaks are easier than thin fillets.

Is halibut good on the grill?+

Yes if the piece is thick and well oiled. It is less forgiving than salmon or swordfish. See our grilling comparison table.
