Fish tajine is how Marrakech eats the Atlantic without a port view: tomato, spices, preserved lemon, and olives around a whole fish that stays moist in the clay (or a heavy pot).

    Season the fish

    Pat fish dry. Rub with salt, pepper, cumin, paprika, ginger, turmeric, lemon juice, and 1 tbsp oil. Rest 15 minutes.

    In a tajine or wide pot, soft onion in olive oil. Add garlic, tomatoes, saffron, and a splash of water. Simmer 8–10 minutes until saucy.

    Add fish, preserved lemon, olives, and herbs. Add stock to come partway up the fish. Cover and simmer gently 15–20 minutes until the flesh near the bone is just opaque.
