Fish tajine is how Marrakech eats the Atlantic without a port view: tomato, spices, preserved lemon, and olives around a whole fish that stays moist in the clay (or a heavy pot).

Method

  1. 1

    Season the fish

Pat fish dry. Rub with salt, pepper, cumin, paprika, ginger, turmeric, lemon juice, and 1 tbsp oil. Rest 15 minutes.

  2. 2

    Build the base

In a tajine or wide pot, soft onion in olive oil. Add garlic, tomatoes, saffron, and a splash of water. Simmer 8–10 minutes until saucy.

  3. 3

    Nestle and steam

Add fish, preserved lemon, olives, and herbs. Add stock to come partway up the fish. Cover and simmer gently 15–20 minutes until the flesh near the bone is just opaque.

  4. 4

    Serve

Taste the broth for salt (preserved lemon is salty). Finish with fresh herbs and olive oil. Serve with bread.

Chef tips

  • Gentle simmer — boiling shreds the fish.
  • Preserved lemon is the signature; fresh lemon alone is a different dish.
  • Pair with chermoula grilled fish on another night for contrast.

No tajine pot?+

Use a heavy lidded casserole or deep skillet. The shape matters less than gentle steam.

Fillets instead of whole fish?+

Yes — reduce simmer time to 8–12 minutes so fillets do not dry.
