Bibs On in Bella Vista: Pirata Crab's Louisiana Trays

Imported crab, crawfish and lobster boiled Cajun-style and poured into steel trays — at a Santo Domingo food hall and a Santiago food park.

Somewhere on Avenida Rómulo Betancourt, next door to the Dragón de Oro supermarket, a steel tray of snow crab legs is landing on a table and somebody is reaching for a plastic bib.

That's Pirata Crab: a Cajun seafood boil counter inside Central Park – Distrito Gastronómico in Bella Vista, with a second stand at The Circus Food Park in Santiago. Their slogan, printed on the menu, is "Tu paladar merece lo mejor."

What actually goes in the pot

The Louisiana boil is a simple idea done loudly. Shellfish cooks with corn, potato and sausage, then everything gets tossed in sauce and tipped into a tray. Pirata Crab ships in most of the seafood: king crab, snow crab, bogavante (the clawed lobster), crawfish, and giant Argentine prawns.

There are three house sauces. Cajun is built on vegetables and spices, lemon-pepper is what it sounds like, and the ajillo is garlic and butter. The heat is optional on all three, which matters more than it sounds, because a table of six rarely agrees on chilli.

The mixed trays are the backbone of the menu. A tray for one and a tray for eight hold the same things — crawfish, a lobster or a giant prawn, snow crab or Jonah crab, shrimp, mussels, corn, sausage and potato — only scaled up. On the September 2025 menu, the tray for two was RD$3,800 before tax. Confirm current prices on WhatsApp, because the menu says taxes are not included.

The local lobster on an imported menu

Here's the order we'd point a first-timer toward, and it isn't the king crab. Tucked among the imports is langosta criolla: Caribbean spiny lobster, the local one, boiled with shrimp, corn and potatoes the same Cajun way. It sits on the menu at RD$2,000, below the imported bogavante tray.

Spiny lobster has no big claws, so you're working the tail, and a Cajun sauce has more to cling to on that firm meat than on a delicate crab leg. If you want the most Dominican thing a Louisiana kitchen in Santo Domingo makes, that's the one. The lobster guide explains the difference between clawed and spiny lobster if you're curious.

Not in a shellfish mood? The Pescado Pirata is a whole chillo (red snapper, 1.5–2 lb), fried or cooked in coconut, with tostones or sweet-potato fries.

Two cities, one WhatsApp

Santiago gets its own counter at The Circus Food Park, at the start of Calle del Sol, in the commercial building at the Monumento de los Héroes de la Restauración.

There's no website. Orders, questions and delivery go through WhatsApp or an Instagram DM to @piratacrab, where 41.6K people follow the trays. One practical warning: the Uber Eats listing still carries the old Garden Food Trucks address in Bella Vista, and that food park has closed. In Santo Domingo, head for Central Park on Rómulo Betancourt.

Who shows up

Their own feed answers that: families with kids working through crab legs with both hands, groups splitting the big trays, and late at night, couples in matching bibs. The latest Instagram schedule has them open 11am to 11pm Monday to Wednesday and until midnight Thursday to Sunday, but the hours have changed before, so check before a late drive.

If you're new to the format, the seafood boil guide covers the basics, and the crab guide is a good primer on the crab species before you choose a tray. Then order a mixed tray, ask for the spice on the side, and wear the bib.
