Alexandria grill versus Cairo dining room
Alexandria still eats fish the Balbaa way: you choose from a cold display, the fish is weighed, and it comes back grilled, fried, or in a tahini bake. The bill is the weight plus the cook. Ask the price per kilo before they take it to the fire. Mullet, sea bream, shrimp, and calamari are the ordinary order. A mountain of rice and salads comes with it. That is the meal, not a prelude to a steak.
Cairo is not a port. The better rooms are explicit about the morning truck from the coast. If a waiter shrugs at "when did this bream arrive," order a simpler grill you can see, or pick a restaurant whose listings show steady review volume rather than a one-off hotel buffet. Fried shrimp should taste of the crust, not of old oil. Grilled fish should still have a moist line at the bone.
Bread, tahini, and a sharp salad are the test of a kitchen that cooks fish every day. A dessert trolley and a long cocktail list are not. Read the Alexandria and Cairo pages side by side, then the country hub only to see which city you are actually in.
Bread and tahini tell you as much as the fish. If the bread is stale and the tahini is watery, the grill is an afterthought. Choose the fish, hear the weight, and skip any platter that will not say whether the shrimp were frozen.
